Maple Rajma Masala with Baked Eggs

  • Cooked rajma 1 cup
  • Olive oil 1 tbsp
  • Cumin seeds 1 tbsp
  • Slice green chilies 1 tbsp
  • Chopped onions 2 tbsp
  • Ginger garlic paste 1 tbsp
  • Red chili powder 1 tbsp
  • Coriander powder 1 tbsp
  • Amchoor powder 1/2 tbsp
  • Tomato purée 1 cup
  • Garam masala 1 tbsp
  • Salt and pepper as per taste
  • Cream 1 tbsp
  • Pure maple syrup 1 1/2 tbsp


  • Heat some olive oil, add the cumin seeds and green chillies. Fry for 1 minute 
  • Add the Ginger garlic paste along with the onions and cook for 10 minute until the mixture is brown
  • Add all the powdered spices and cook for 10 minutes along with the tomato purée 
  • Add cooked beans and season to taste with salt n pepper
  • Transfer the beans into a baking or ovenproof dish
  • Crack the eggs carefully into the bowl and bake this mixture until the eggs are cooked about 12 minutes 
  • Drizzle some maple syrup
  • Serve with fresh bread or rotis
