Maple Orange Cupcakes

INGREDIENTS:

  • Flour 200 gm
  • A pinch of baking powder
  • A pinch of baking soda
  • Almond milk/Coconut milk 1 cup
  • Melted Butter 1 tbsp
  • Vanilla essence 1 tbsp
  • A pinch of clove powder

For the orange butter glaze:

  • Orange juice 1 tbsp
  • Butter 3 tbsp
  • Pure maple syrup 1 tbsp
  • Condensed milk 1/2 cup

METHOD:

  • Preheat the oven to 180⁰ c
  • Grease a muffin or cupcake tray with some oil or butter
  • Whisk all the ingredients to make a thick batter
  • Pour the batter into the molds 
  • Bake for 12 to 15 minutes until golden brown 
  • Cool on a rack for an hour 

For the orange butter glaze:

  • Melt the butter with the orange juice and maple syrup add the condensed milk and reduce for 10 minutes 
  • Cool for 5 minutes 
  • Drizzle over the cupcakes and serve
