Maplua Spiced Maple Glaze

Maplua with Spiced Maple Glaze


  • 1 cup plain flour
  • ½ cup  semolina (sooji)
  • ¼ cup maple syrup
  • ½ tsp fennel seeds/ saunf, powdered
  • ¼ tsp cardamom powder / elaichi powder
  • ½ cup milk /
  • Water if required, to prepare batter
  • Oil for deep frying
  • Dried fruits for garnishing

For syrup:

  • 1 cup pure maple syrup
  • ¼ tsp cardamom powder / elaichi powder
  • Few threads saffron


  • In a large mixing bowl take flour, semolina, and pure maple syrup. Mix the fennel and cardamom powders
  • Add the milk and mix well, making sure there are no lumps. Add water if needed. You’re looking for a thick batter. Thick enough that it can hold its round shape when dipped in hot oil
  • Mix well for about 5 minutes and let the batter rest for at least 30 minutes
  • In a pan, add vegetable oil and let it come to temperature.
  • Take a ladle and add spoonfuls of the batter into hot oil. once the malpua starts to float, splash oil over malpuas. Fry both sides as the malpua puffs up and it becomes golden brown
  • Drain the malpuas onto the a kitchen towel to remove excess oil
  • Soak the malpuas into hot spiced pure maple syrup
  • Rest for 10 minutes making sure both the sides of malpua are soaked well. Serve with dried fruits
