Black Rice Kheer

INGREDIENTS:

  • 100 g cup black rice
  • 5 cups full-cream milk
  • 65ml pure maple syrup
  • 1/2 teaspoon ground green cardamom

METHOD:

  • Rinse the rice and soak in water for about six hours or overnight. Drain the rice and transfer to a saucepan with the milk.
  • Bring the rice to boil, then reduce the heat, and simmer, stirring frequently for about 30 minutes.
  • Add pure maple syrup and cook for five more minutes. Stir frequently.
  • Garnish with cardamom and remove from the heat. Serve hot, warm or cold.
